Difference between Ice Cream & Frozen Dessert

 


So what exactly is frozen dessert and how is it distinct from ice creams. Most people often get confused between frozen desserts and ice cream, so let's get a deeper understanding between both the products. Here we will try to clear all the doubts and give a simplified answer so that the consumers get aware about the same when they go in the market and purchase.

Frozen dessert is a generic term denoting any of the desserts prepared by freezing. On the other hand, ice cream is a popular type of frozen dessert which is made from dairy products and to prepare ice creams, the main ingredients are mixed and then churned constantly while being frozen.

Frozen dessert is a sweet course or dish which is prepared by using freezing techniques. They can be prepared by freezing any forms of ingredients like liquids or semi liquids. They may also be prepared by freezing solids sometimes. Frozen dessert are quiet popular and especially during the summers. It is a generic name, and therefore covers a wide range of desserts prepared by freezing.

Frozen desserts are considered to be first prepared in 3000 BC where Asians realized that crushed ice and flavoring can be eaten. Most of these desserts do not involve heating in preparation. Any item that contains a freezing process in the preparation and is sweet can be termed as a frozen dessert. 

At that time, people discovered that even ice could be served as a dessert by flavoring. Around that period, the ice was crushed and flavored using sweeteners and served to the guests. Nowadays, there are varieties of frozen desserts available in the market. 

Those inventions of crushed ice and flavor are now popular as sherbet, ice golas, etc., but other kinds of desserts are also available like frozen custards, frozen yogurt, ice pops, and many others. 

Frozen desserts are mainly made from vegetable oils. These are also available in various flavors. The flavors depend on the type of frozen desserts. All flavors are not suited for all types of desserts prepared.

Ice cream is a dairy based frozen dessert. The main ingredients of the ice creams like milk, sugar, cream and flavoring are churned while freezing this mixture. This process incorporates air and ice cream gets prepared. 

The stark difference between ice cream and frozen desserts is that Ice cream is made from dairy products such as milk or cream, eggs, sugar, vanilla extract, and other flavorings. The mixture is then churned into soft, creamy solids called ice cream.

On the other hand, frozen desserts are similar to ice cream, except they are made from vegetable oil, flour, and sugar. They are often served cold and eaten straight out of the freezer.

The Food Safety and Standards Authority of India (FSSAI) has categorized ice cream as “a milk-based dessert”. According to the number of total solids, milk fat, and milk protein used, ice cream is further divided into three categories: plain, medium fat, and low fat.

The term "frozen dessert” is used by the food regulator to describe a product made by freezing a pasteurized mixture made with milk fat and/or edible vegetable oils and fat. Such desserts use milk fat to keep the ingredients frozen. 

Compared to frozen desserts, ice cream has less fat and carbs. Ice cream contains 5.6 g of fat per 100 g, on the other hand, frozen dessert has 10.56 g of fat.

With the aforementioned differences, there is no doubt, which one of the two is better. 

According to Indian food laws, it is prohibited to pass off frozen desserts as ice cream, yet many of the country's leading "ice cream" manufacturers disregard this regulation.

This led to a legal dispute between Amul Ice Cream and Hindustan Unilever’s Kwality Walls, India’s leading ice cream and frozen dessert manufacturers, respectively. 

Barring a few companies in the market such as Amul, Mother Dairy, Hatsun Agro Food Ltd and Havmor, others –including Kwality Walls (Hindustan Unilever) – serve frozen desserts and not ice-creams. International brands such as Haagen Dazs, Movenpick (Nestle), Swensen's and Baskin Robbins offer ice-creams. Vadilal sells both.

According to the definition of milk and milk products under the Prevention of Food Adulteration Rules, 1955, an ice-cream is a product with not less than 10 per cent of milk fat, whereas frozen dessert contains vegetable fat.

The bottom line is that ice cream and frozen desserts are strikingly similar yet different from one another. Ice cream is made of milk-based products, whereas frozen dessert is made of vegetable oil, which is often considered a cheap substitute for butter. 

Whenever you buy one of these sweet, cold deliciousness, make sure to check the ingredients label and read the package carefully, in order to distinguish whether you have bought an ice cream or a frozen dessert.
